Baijiu 白酒 is the most popular traditional Chinese alcoholic beverage. It is also the nr 1 selling spirit in the world.

Baijiu is a clear spirit unique to China. The base is grain, usually sorghum, corn, wheat, rice, millet or a combination thereof. Baijiu is the name for all Chinese distilled spirits and categorized by the flavor. Common categories are strong aroma 浓香, sauce aroma 酱香, light aroma 清香, fenix aroma 凤香 and rice aroma 米香.

Baijiu is an essential part of Chinas culinary heritage, it is the best known spirit you have never heard of.

Red Star Erguotou

Established in the year of 1949, the Red Star distillery is China's first company and as old as the People's Republic itself.

Red Star is the nr. 1 brand for light aroma baijiu and the most iconic beverage of Beijing culinary heritage. This is the drink of the people, it is the beverage of choice for proletarian and blue collar people alike. 

Luzhou Laojiao

Luzhou Laojiao is the nr 1 producer of strong aroma baijiu in China. Its legacy can be traced back 5 centuries, with the original cellars dating back to 1573 which has awarded the company the recognition of "National Cellars", something that has also given name to their flagship product.

At the sacred birthplace of strong aroma baijiu, Luzhou county, spring water from the Phoenix mountain and the Dragon Spring Well is mixed with home grown organic glutinous sorghum. The result is the most mellow and smooth flavor profile with a crisp and long finish. 

Ikuang

Ikuang is a small producer of strong aroma baijiu. Its production is located in the heart of baijiu-China; Luzhou in Sichuan province. In contrast to the single grain baijiu produced by Luzhou Laojiao the baijiu from Ikuang is a multi grain strong aroma. Utilizing the same composition of grains as for example Wu liang ye; sorghum, rice, sticky rice, corn and wheat, the flavor profile of the multi grain strong aroma baijiu is a more harmonious one. Instead of the pungent kicks of pineapple, star anis och ancient cellars so front forward in single grain strong aroma, the multi grain strong aroma from Ikuang binds those same flavors together and offers a much more smooth drinking experience.   

Jinsha Gujiu

金沙古酒

Jinsha Gujiu is one of the oldest producers of sauce aroma baijiu. Just as its better known big brother Kweichow Moutai the Jinsha Gujiu distillery draws pristine water from the legendary Chishui river, better known as 'The River of Beautiful Alcohol'.

Jinsha lies upstream along the Chishui river in Guizhou province and produces a more soft liquor than that produced in the city of Maotai. It is less pungent in the defining sauce aromas and falls under the sub-category of 'soft style sauce aroma' 柔派酱香.  

Pearl Red

Pearl Red is a producer of rice aroma baijiu. They are situated in Meizhou, Guangdong province. Rice aroma baijiu is the only style of baijiu made from rice. The flavors are soft, sweet and floral similar to the delicate aromas of sake. With Cantonese food which celebrates the natural flavors of the ingredients, think dimsum, char siu pork or steamed seafood, this is the ultimate pairing.

Pearl Red is a brand based in tradition but also with progression close at hand. Thus they have innovated a rice whisky under the name Grand Talon. It is rice based but aged but it traditional ceramic Hakka-rice wine vats as well as in french and american oak.
