Shaoxing rice wine 绍兴黄酒

Shaoxing is perhaps the best kept secret of the culinary world. It is a fermented drink native to China and the Zhejiang area. It is based on rice with a production craft similar to Japanese sake but its appearance and flavor is more similar to sherry. It is smooth and mellow on the palate with notes of plums and cherries and a beautiful deep bronze color. Huangjiu is China’s most ancient brew which throughout history has been, and still is, loved by royalty, aristocracy, scholars and commoners alike.

Shaoxing comes in many forms but is commonly categorized as Yuanhong (dry), Jiafan/Huadiao (semi-dry), Shanniang (semi-sweet) and Xiangxue (sweet). The Jiafan category is hands down the most popular and serve as the ultimate compliment to low-spicy Asian foods, seafood, mushrooms and traditional Scandinavian flavours. It is also a great companion to snacks such as nuts and cold cuts. 

Kuaijishan 会稽山

Located in Shaoxing, the hometown of huangjiu, the Kuaijishan Shaoxing Wine Co Ltd draws on millennia old brewing traditions to produce the finest Shaoxing rice wine there is. Utilizing only the finest glutinous rice, water from the revered Mirror Lake and wheat for its ”qu” (the yeast and saccharification agent). Established in 1743 Kuaijishan is now one of the two leading Shaoxing rice wine brands in China.

At present Lu Spirits offer a number of products from Kuaijishan. All are of the semi-dry ”jiafan” category and have been aged for 5, 8, 10, 12, 20 or 30 years respectively. Shaoxing wine age well and become more refined and more polished with time. The older it is the better it is.
